Freeze-Dry Method (Best for Color & Flavor)

  1. Spread lemon, lime, and orange zest separately on freeze dryer trays.
  2. Freeze dry until completely crisp — the zest should snap cleanly when bent.

Dehydrator Method

  1. Spread zest on dehydrator sheets.
  2. Dry at 95–105°F (35–40°C) until brittle — usually 6–8 hours.

Oven Method

  1. Spread zest on a parchment-lined baking sheet.
  2. Dry in the oven at the lowest temp with the door slightly cracked until crisp (1–3 hours).

Step 4 — Grind & Blend

  1. Once zest is completely dry, cool to room temperature to prevent condensation.
  2. Grind each citrus type separately in a spice grinder or high-speed blender until fine.
  3. Sift if desired for a smoother texture.
  4. Combine in a jar at your preferred ratio — a good starting point is:
    • 2 parts lemon powder
    • 1 part lime powder
    • 1 part orange powder
